What You'll Need

– 11 oz butterscotch chips – mini chocolate Easter eggs – 2 Tbsp peanut butter – 8 oz chow mien ( crispy noodles )

Step 1

Melt the butterscotch chips in the microwave for 30 seconds than stir with a spoon until smooth.  You can also melt them in a sauce pan on low ( be careful not to burn them ).

Step 2

Next add 2 tbs of peanut butter and stir again until combined.

Step 3

Add 8oz of chow mein noodles.

Step 4

Mix the mixture until the chow mien is evenly coated. Use a spoon to create Cookie shapes and display on wax paper. If you want really uniform cookies you can also fill a cupcake pan be sure to spray the pan with cooking spray before you add the cookies so they don’t stick.

Step 5

Before the chocolate sets add chocolate eggs in the center. Let the cookies rest until the chocolate has cooled and they become solid. ( can also be chilled) That’s it! don’t eat them all in one go

They are so yummy! If you love butterscotch you’ll love these! Hope you enjoy them! You can also swap out the butterscotch for dark or milk chocolate if you want them less sweet!
